Email hosting on a remote server?

I'm really hoping this is possible and if someone can tell me. I'm going to get a server pretty soon, and its running Windows Server 2008. I have webhosting with 1&1. Does anybody know a way to set email servers to go somewhere else (eg. the server) If i have to move webhosts, i can do that.

1. You just need to create a new MX record with your host. It's pretty simple and takes about 48 hours to update throughout DNS
